This goal was inspired by research from the American Gut Project, which found that the more variety of plants we eat, the more diverse our gut microbiome tends to be. A diverse microbiome is associated with better overall health and may help reduce the risk of chronic disease.
 
Each recipe is designed to be simple, delicious and full of flavor, with plants taking center stage alongside aromatic herbs, spices and flavorful ingredients. These are recipes you’ll want to make again and again, whether you’re cooking for yourself, feeding your family or gathering around the table with friends. All profits from More Plants, More Flavor will be donated to World Central Kitchen (WCK), a nonprofit founded by chef José Andrés that brings fresh meals to people facing hunger and crisis around the world. In many ways, this is an extension of what she hopes this book will inspire: to see food not simply as something we eat, but as a way to nourish ourselves, gather around the table and care for others. It feels especially meaningful to have More Plants, More Flavor help carry that spirit beyond our own kitchens.
